Dark Surfaced Bakeware The advantage of the dark surfaced sheet pans and cake pans is that they allow foods to brown more quickly. The black color retains heat more readily. This can sometimes result in cookies or cake layers browning too fast. Try reducing the oven temperature by 25 degrees if this problem occurs. Each weekday we will publish a family friendly tip.
