Cutting In

You may come across the term "cut in" when preparing certain baking recipes. This means to combine a dry ingredient (like flour) with a solid fat (usually butter or shortening). The end result should be small, meal-like particles. This can be done easily by using the pulse feature of a food processor. Other methods include working the ingredients between two knives or gently kneading them with your fingers.
