Cool Summer Snack Recipes

by Danielle Schultz

Summer is here and the kids are hot! Let them help you make some of these cool treats to wet their whistles.

Apples and Peanut Butter Cut apples into slices. Allow the kids to spread peanut butter on the slices with a butter knife.

Banana Sandwich Have the kids each peel a banana, and cut into pieces with a butter knife (cut so the pieces end up coin-shaped.) Let the children spread peanut butter on one banana piece, then put another banana piece on top. Voila! Banana sandwich!

Celery Treats Cool celery can be topped with a variety of toppings for a summer cool-down. Try any or all of the following: cream cheese (plain and vegetable flavored), peanut butter (with raisin on top if desired), spreadable or squeeze cheese.

Citrus Juice Medley 1 1/2 cup grapefruit juice 1/2 cup lemon juice 1 cup orange juice 2/3 cup sugar

Have the children assist in combining the ingredients in a pitcher and stir well. Makes 8 servings.

Cottage Cheese Dip 1/2 package onion or vegetable soup mix 1/3 cup milk 1 pint cottage cheese

Have the children measure and mix the ingredients. Refrigerate for thirty minutes. Serve with crackers, carrot or celery sticks, cucumber slices, broccoli or cauliflour.

Personal Fruit Salad

Allow the children to help you prepare the following and place into bowls: melon (in chunks or balls), grapes, raisins, shredded coconut, pineapple chunks, strawberries (halved or quartered), oranges (in slices). Allow the children to spoon the desired fruits into a bowl to make their own combination. Top with a sprinkling of sugar if desired. (For an added treat, you may wish to allow the children to use skewers to make fruit kebabs.)Sparkling Punch

Sparkling Punch 1 bottle (34 oz) club soda 3 cups water 1 12 oz. can unsweetened apple juice concentrate

Allow the children to help you measure the ingredients into a pitcher and stir.

Sweet Carrot Sticks Place carrot sticks or baby carrots into a container with unsweetened pineapple juice (be sure the carrots are covered.) Chill for sixty minutes.

Yogurt Fruit Dip 1/2 cup plain yogurt 2 tablespoons unsweetened orange or apple juice concentrate fresh fruit of choice

Allow the children to mix the yogurt with orange or apple juice concentrate in a medium sized bowl. Cut the fruit into chunks. Let the children use blunt toothpicks to dip the fruit into the yogurt dip.

Milkshakes... Let the children help you measure out the ingredients for the milkshakes below and blend. Please note that most of the recipes are per child, so if you have two children double the recipe, triple it for three and so on. (And don't forget yourself!!)

Banana Milkshake 1 cup milk 1 large banana, sliced

Fresh Berry Shake 1/2 sliced banana 1/4 cup fresh berries 1 cup milk

Orange Delight 1/4 cup milk 1/2 cup unsweetened orange juice concentrate 1/2 cup plain yogurt or 1 banana

Pineapple Milkshake 1/4 cup powdered milk 1 small banana, sliced 1 cup unsweetened pineapple juice 1 teaspoon vanilla
