YOU WILL NEED: 2 cups seeded watermelon chunks 3/4 cup chopped sweet onion 3/4 cup canned black beans, rinsed and drained 1/4 cup chopped fresh cilantro 1 tablespoon brown sugar 1/2 teaspoon salt
DIRECTIONS: Combine all ingredients in a mixing bowl. Cover and refrigerate for at least 1 hour to blend flavors. Stir before serving. Serve with corn chips.
Watermelon Smoothie
YOU WILL NEED: 2 cups seeded watermelon chunks 1 cup crushed ice 1/2 cup low fat plain yogurt 1 tablespoon sugar 1/2 teaspoon ground ginger 1/8 teaspoon almond extract
DIRECTIONS: Combine all ingredients in a blender. Blend until smooth. Watermelon Fizz
YOU WILL NEED: 1 watermelon (15 cups) 5 cups cantaloupe chunks 1 cup banana chunks 2 cups pineapple chunks 12 ounces lemon-lime seltzer
DIRECTIONS: Cut watermelon lengthwise. Scoop balls from the center using a melon scoop. Halve the cantaloupe. Remove the seeds and scoop balls from the cantaloupe. Cut bananas into bite-size pieces. Drain pineapple chunks. Combine fruits in half of the watermelon shell. Toss to combine. Cover and chill in the refrigerator until ready to serve. Pour chilled lemon-lime seltzer over fruits. Serve immediately. WATERMELON WALDROFT SALAD
YOU WILL NEED: 2 cups seeded watermelon chunks 1/2 cup diced celery 1/2 cup seedless grape halves 1/4 cup low fat plain yogurt 2 tablespoons sliced almonds* toasted
DIRECTIONS: In a mixing bowl, combine watermelon, celery, and grapes. Just before serving, add yogurt; stir to coat. Sprinkle with almonds.
* Do not serve to children under the age of 1 year due to the risk of choking.
