YOU WILL NEED: 1 cup of sugar 1 cup of applesauce 1/3 cup of vegetable oil 2 eggs, at room temperature 3 tablespoons milk, at room temperature 2 cups sifted flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 1/4 teaspoon ground nutmeg 3/4 cup chopped pecans
TOPPING: 1/4 cup brown sugar 1/2 teaspoon ground cinnamon 1/4 cup chopped pecans
DIRECTIONS: Preheat oven at 350 degrees. Grease an 8-1/2 inch by 4-1/2 inch pan. In large bowl, thoroughly combine sugar, applesauce, oil, eggs, and milk. Sift together flour, baking soda, baking powder, cinnamon, salt and nutmeg. Add to applesauce mixture; Stir until well combined. Stir in pecans. Turn into prepared pan. Combine topping ingredients; sprinkle evenly over batter. Bake 1 hour; cover with foil after 30 minutes to avoid over-browning. Remove from pan and cool.
