Roadside Potatoes
16 oz frozen hash browns
1/4 cup melted butter
1 small onion minced
1/2 cup each cheddar and parmesan cheese
S & P
1/3 cup half and half
3 Tbs firm butter
In bowl combine potatoes, melted butter, onion, and cheeses.
Put in well buttered 9 inch baking dish. sprinkle with S & P, and pour half and half over top.
Dot with butter.
Bake at 350* for 1 hour or until potatoes are slightly crusty on edges, and lightly browned.
Serve immediately.
Cheese Strata
8 slices white bread (trimmed of crusts)
1/4 – 1/2 LB of shredded cheddar cheese|
3 eggs
1 1/2 cups milk
Lay four slices of white bread on the bottom of a glass cooking dish (ungreased).
Sprinkle shredded cheese over bread.
Lay remaining four slices of white bread on top of the cheese.
Mix eggs and milk together. Pour mixture over bread and cheese.
Cover dish and place in refrigerator for 2-3 hours.
Bake uncovered in 325 degree oven for 1 hour. As this is similar to a souffle, be careful not to hop/jump/thump during this last hour or the strata will fall. Serve.
Upside Down Pizza
2 pounds ground beef
1 jar (15 ounces) pizza sauce
2 cups shredded cheddar
2 eggs slightly beaten
8 ounces sliced mozzarella
1 can crescent dinner rolls
Brown and drain beef.
Add eggs to beef and then add the pizza sauce.
Pour into 13 by 9 inch pan.
Spread out evenly and top with cheeses.
Unroll crescent rolls, seal perforations and roll to fit top of pan, place over cheese.
Bake at 350 degrees for 20 minutes. Serve
Tuna Patties
Use this recipe for each 6oz can of tuna. Each 6oz can of tuna will yeild 3 tuna patties. 1 patty is sufficient for the daily recommended for meat, but is usually not enough for a smile from the child. They usually want 2.
1 6oz can of tuna (in water, not oil)
1 egg
1/4 pkg saltine crackers
Cube of butter
Flake the tuna in a bowl (after draining completely).
Crunch up crackers into tuna. Add egg.
Mix well and shape into patties.
In skillet, melt butter.
Turn burner down to medium heat.
Fry patties in butter until golden on each side.
Serve warm with tarter sauce (optional)
